Lara shares her vast experience and array of Southern recipes with her constantly growing followers. She has been featured in numerous magazines, newspapers, and radio shows across the US and Canada. First up, let me say that this is a very pretty book. With floral end papers and a different floral pattern for the first page for each new chapter, many photos on satin paper and an embossed cover, the presentation is lovely.I love Southern food and thought that some reinvented lighter Southern recipes would be great to add to my collection. However, upon closer inspection, I was disappointed in many of the recipes.Some of these recipes may be slightly healthier Southern food than your average Southern food book, but on the whole it isn’t what I would call healthy food. In addition, the nutritional facts are not provided, which would be especially handy in this case, so that you could actually compare the recipes to the usual version to see how many calories you actually save with Lara’s no-guilt version.Lets look more closely at one of those: The crab dip. Contains 1lb crabmeat (438 calories) and a cup of mayonnaise (960 calories Hellmans) and a cup of almond based cream cheese (240 calories) and half a cup swiss cheese (205 calories) and onion and bell peppers (122 calories) Sure, almond cream cheese has about 35 calories per tablespoon and dairy cream cheese has around 50, but what is a mere 15 calories between friends, when the crab dip comes in at 1965 calories per small bowl?Ok, well the crab dip aside, because you aren’t going to eat a whole bowl of it, (not that I couldn’t!) In the appetizer section, we also have a recipe for aHerb dip (1/2 cup olive oil and ½ cup almond cream cheese)Crackers made with melted parmesan cheese and rosemary (that’s the whole ingredient list)Pecan truffles (cream cheese, truffle oil, pecans and seasonings)Boiled peanuts (no need to look more closely at the calorie count there)Stuffed Peppers (also with cream cheese, herbs and diced peppers)Wings (baked not fried, but still)Chipotle Maple Pecans (egg whites, maple syrup, pecans and spices)Truffle Deviled Eggs (olive oil mayo again, truffle oil herbs and mustard)An olive pecan dip with pecan oil, olives and pecans and seasonings, also not really what I would consider a low calorie dip.That’s it for the appetizers. Getting the idea? Lots of pecan or olive oil, almond cream cheese and other cheeses, and high calorie items like peanuts, pecans, eggs and wings. Basically, these are high calorie appetizers despite the fact that the mayo is an olive oil mayo and the cream cheese is almond based. Olive Oil mayo has approx 100 calories per 1 Tb, it could hardly be considered a “skinny” ingredient- it actually beats out the average non-olive oil mayo which is 90 calories per tablespoon but olive oil is better for you by far than the oils usually used in mayo so that’s good, but its not lower calorie.Ok, so appetizers are usually disastrously high in calories. So lets skip the appetizers and look at the mains. (I skipped over a few chapters there but will come back to them)MAINSCrab cakes with Remoulade (ok the crab cakes do include quinoa and they are baked not fried, which is great) but the remoulade is basically all mayo and cream cheese so a traditional fried crab cake would probably have less calories. I do like the idea of adding quinoa to crab cakes though, but without the remoulade.Creole Oven Fried Chicken (Chicken Breasts dredged in almond flour and fried in pecan oil, not much more to say here)Roasted Filet of Beef with Italian Salsa Verde. This could have been good, but the salsa verde contains ½ cup of olive oil to 2.5 cups of herbs. That’s a lot of oil! At that rate (it serves 6) the calorie count for the salsa verde would add 200 calories per serving not including the meat! A couple of tablespoons of oil would have sufficed. The lightened up salsa could then be used on chicken or fish or pork and would pack a flavor punch without many calories.Grilled Lamb Chops (marinated in olive oil, lemon juice and herbs) with a Sweet Onion Sauce. The bad news? The sauce contains equal parts each olive oil, coconut sugar, vinegar. Lamb chops marinated and grilled are great without a heavy sauce so why add the extra fat and sugar and calories to what would have been an ok main? As with the Beef with Salsa Verde and the Crab Cake Remoulade, these condiments are adding an enormous amount of unnecessary calories at the very least, not to mention the nutritional nightmare with all that fat and sugar. Those mains could not be considered to be “skinny” options by any stretch of the imagination.Herbed Pork Tenderloin (Seared in oil in a pan then roasted – this is how I do tenderloin AKA Paul Ruhlman etc, but Lara recommends ½ lb meat each person at 333 calories not counting the olive oil, and that’s just the meat portion of the meal) but at least there is no calorie rich condiment.Pecan Crusted Catfish – oven fried pecan meal crusted (This ones quite good. Adds a few extra calories with pecan meal rather than all purpose flour – although it does have more nutrients) Farmed catfish isn’t the healthiest fish choice although it is a southern staple, so popping it in the oven instead of pan frying it is good and I haven’t used pecan flour before so I am interested in trying that.Roasted Cornish Hens with a honey peach glaze which is equal parts honey and peaches with some orange juice and vinegar. That’s a lot of sugar calories even though its honey, surely a better option would have been a fresh peach salsa? That would have been my preference, rather than glazing the hens with sugary peach preserves.Arnold Palmer Quail (not sure where I can get quail) marinated in honey and earl grey tea (sounds interesting and the marinade is discarded so the ¼ cup of honey maybe isn’t too bad) I can’t buy quail where I live but perhaps I could do this with Cornish hens or chicken.Salmon with Ginger Lime Sauce (sauce has ½ cup mayonnaise and ¼ cup honey) So here’s another one where the good quality protein is sullied by a calorie rich fatty sauce. Salmon is already a fatty fish so a basting the fish with lime and ginger and a little olive oil would have been far better than a mayo based sauce here!Seafood Omelet (almond cream cheese appears again along with parmesan cheese) This would be fine for lunch with a huge salad.Truffle Rosemary Chicken (Breasts Pan-seared in pecan oil, finished in oven with a truffle oil and chicken broth sauce) Better than chicken breaded and fried, I guess.Ok so that’s all of the mains. As you can see, many of them add a high fat, high sugar sauce – the sauces could have been lightened up considerably without sacrificing flavor. Some mains are just fried and to hell with it.This review is getting looooong so let me throw some info out there about some of the other chapters:Rubs, Spice blends and sauces – the dry rubs are helpful. The horseradish sauce contains a lot of mayo and cream cheese, there is a recipe for ketchup and a mango chutney and BBQ sauce and a maple and blue cheese vinaigretteSoups – cauliflower, chicken taco, chili, shrimp and grits, strawberry soup (sounds like a dessert to me maybe could have contained some savory notes?) Butternut squash and Sweet Potato, Seafood Gumbo, Oyster Stew. Some of these are admittedly hard to do a skinny version of, and the Gumbo is a case in point. No attempt has been made to lighten it up. It contains a butter and olive oil roux (FYI it is actually much easier to do it all with oil as the butter solids can burn easily) Lara uses almond flour instead of all purpose.The chili has ½ cup of coconut sugar which seems like a LOT.The cauliflower soup contains coconut milk which sounds interesting as does the Oyster stew BUT coconut milk contains double the amount of fat than half and half and three times the amount of saturated fat AND almost 3 times the calories!! Coconut milk cannot be considered a “skinny” option! Half and half would be far lower in calories and most of us know that a soup with half and half isn’t a skinny option either!Salads – A few skinny options here ie. cucumber, quinoa, fruit salad but the same can’t be said for the other three Curried Grilled Quail (lots of mayo and macadamias) Marinated Mushroom (lots of olive oil in the dressing) Onion and Mushroom (lots of pecan oil, truffle oil, pecorino cheese)Sides - Brussels in mustard are a good option, as are Oven Baked Green Tomatoes, Sauteed Kale and pico de gallo, ratatouille, spaghetti squash, but not so much the Green Bean Casserole, standard glazed carrots, mashed cauli with cream cheese, and roasted sweet potato fries in ¼ cup olive oil.Breads and Desserts – with the exception of using almond or coconut flour, honey, coconut sugar or maple syrup, coconut oil and ghee instead of the standard all purpose flour, white sugar and butter, thus adding some trace nutrients - these recipes to my eye are not skinny versions. Coconut sugar has a very slightly decreased Glycemic Index and contains some trace nutrients, but contains the same amount of calories as regular sugar, so simply switching one for the other isn’t going to help you to slim down.The Honey Cornbread contains 1/3 cup honey and ¼ cup coconut sugar. That’s some exceptionally sweet cornbread right there! Many of the other recipes also contain more than one type of sugar. Combining coconut sugar and honey in one recipe might sound like the sugar content isn’t so bad but they are both sugars!The Cranberry Coffee Cake contains three sugars: Maple, Coconut and Honey, added together you may as well use a cup of sugar.The Classic Southern Pound Cake contains 1.5 cups coconut sugar and 1.5 cups butter. It switches out some of the flour for almond flour but “skinny” or healthy? No.Despite the sugar content of these desserts, I am intrigued/confused by two recipes, the Blueberry Muffins and Coconut Lime Cake simply because they don’t contain any fat (apart from the whipped coconut cream on the top of the cake which is high in fat) I am dubious about the texture of these two recipes, but I am going to try them and report back. However, I am currently restricting my sugar intake so this will need to wait for a bit. The pear crisp contains no less than 2 cups of sugar and 1 cup of butter and 2 Tb coconut oil!Kids in the Kitchen – cookies, popsicles, trail mix and the like.Drinks – a couple of smoothies, lattes, and hot and iced teas.If you are still with me, then bravo! I obviously had a lot to say about this book and you have obviously been very interested in purchasing it to have read this far. So thank you for sticking with me, and I hope this helped you make up your mind.There are some nice sounding simple recipes in here – but not a lot of Skinny ones and that is the title of this book. I will be giving this book 3 stars and yes I wavered on giving it two, because it isn’t a successful venture if you consider what it set out to achieve. Sure, the author might have lost a lot of weight eating like this but (and I don’t mean to be personal) that simply must be more of a critique on what the author was eating before – I for one would put on a lot of weight if I cooked from this book every night.So, don’t buy it thinking that you are getting very healthy recipes or low fat/low sugar recipes. If you want some simple southern style weeknight recipes, and aren’t too bothered about your fat and sugar intake or your weight - then there are some decent recipes here.I feel a bit bad writing this review - I do understand how long it takes to write a recipe book – it is a labor of love and I know that the reviews are taken to heart by authors, but I was disappointed at many of these recipes.If you already are conscious of what you eat and eat everything in moderation and avoid fast food and have a reasonable produce intake then you may just put on weight eating like this. At the end of the day its up to you. I am on the fence about whether I will return the book or keep it at this point. I could not wait to get this cookbook in my hands! My husband and I have talked about making dietary changes because he has Type 2 Diabetes and I have Hashimotos Disease. We were somewhat hesitant with the gluten free route because we were afraid we would have to sacrifice flavor - After DEVOURING our dinner and dessert this evening, we are hooked! I highly recommend this cookbook because the recipes are simple, ingredients are easy to find, and the food is delicious!

Beautiful cookbook....Simple, yummy, healthy recipes! I love that the recipes are not too complicated for the average cook. From the scrumptious desserts like the CHOCOLATE ALMOND EXPRESSO CAKE (made in one bowl!) to the “FRIED GREEN TOMATOES”, this cookbook makes clean, healthy eating easy and delicious.

I am thrilled to have a cookbook that offers healthy alternatives for some classic southern dishes. With five kiddos, I am especially excited about the kiddos in the kitchen section. The chocolate chip cookies are so yummy!

I am so in love with these recipes and this book! A perfect twist on our southern favorites!!!

Very funny great deal

This book made my 8 year old boy and 12 year old girl laugh so much. We had a Christmas party, and all the children were being amused by all the jokes in this book. This is a great book for adults too, although this book was targeted towards kids. Definitely recommend this book for all purposes. 🤣

CHAPTER 1 In April 2009, I stood in front of a full-length mirror and stared at my distended belly. I'd given birth to twin girls eight years earlier but looked and felt as if I was about to go into labor, except I was not pregnant. What I was--was a mystery. My runner's body had vanished overnight. I struggled to stay balanced on my feet. My dark hair, once shiny, had turned dull and fell out in clumps. I was shedding as frequently as the Golden Retriever that sat at my feet. Something was very wrong and he knew it. Buddy stared up at me, yearning for attention and a chance to play, but any activity other than sleep was more than I could handle. He was barely a year old, but I swear he was trying to apologize. His big brown eyes asked, is it really my fault? ** My fraternal twin daughters, Abby and Jolie, begged me to get a dog after we read every tale of Biscuit the Puppy and watched all the "Air Bud" movies. By May 2008, my husband and I finally gave in and contacted the breeder that my sister used the prior year. We told the girls we were going to the "dog farm," the breeder's house, to play with purebred Golden Retrievers. I melted seeing the girls sitting on the kennel floor surrounded by a new litter. I didn't care that it was filthy--it was a kennel after all. Abby and Jolie were ecstatic. "What would you say if we told you that we can bring one of these puppies home soon?" A chorus of "OMGs" were followed by a round of "THANK YOUs!" Two weeks later, we returned to choose our puppy. Choosing a puppy required some preparation and a lot of reading. I had done my homework, determined to find just the right dog for our family. What exactly did that mean? I wanted a smart dog, an affectionate dog, a dog that behaved and was good with children and made bad people run like hell from our house. I wanted a dog that looked cute, that we loved very much and that loved us back unconditionally. I wanted a dog that the girls would learn to take care of. Like a 4-H project. We could do this, I kept telling myself. It might even be fun. I did not have a dog growing up and hadn't considered myself a dog person until I spent time at my first boyfriend's house in junior high school. Stephen owned a beautiful blonde Golden Retriever with a seemingly submissive personality. He made it look like taking care of a dog was easy. I thought so, too, until his dog pinned me against the door in Stephen's laundry room, where he stayed when people visited. All he wanted was to play with someone and receive some attention. I knew he wouldn't hurt me but I panicked and screamed for help. Later in college, I had another chance to become a dog lover when my roommate agreed to keep her boyfriend's new litter of Bulldog puppies at our apartment. Their hairless bodies fit into the palms of our hands and I found myself racing home from class every day to play with them. Once they were sold, our apartment seemed empty. I was startled by how quickly I had bonded with those puppies and I missed them very much. When my daughters fell in love with the storybook character "Biscuit," it didn't take much time for me to start dreaming about our new lives together. I could imagine myself in our local dog park, chatting with my new dog lover friends, tossing Frisbees and balls, comparing dog foods and obedience training. Adding a dog to our family would complete us, I believed. The picture was almost perfect. I wanted 'the perfect dog,' but every puppy squirmed right out of my arms before I could complete the four personality tests recommended in Good Owners, Great Dogs; What All Good Dogs Should Know; Children with their Dogs and Golden Retrievers for Dummies. "You think those tests will work completely?" my husband, Jeff, asked dubiously. I continued petting the puppy between my legs, aware of my husband's smirking. I refused to let his healthy skepticism alter my plans. He nudged me a few times in the arm, then flashed his goofy, dimpled grin and raised his eyebrows until they disappeared under the lid of his baseball hat. He raised his hat in one hand, pushed back his brown hair with the other and winked--as if to emphasize his teasing. I elbowed him and rolled my eyes. The breeder helped narrow the selection for us, removing the puppies we didn't want, leaving us with three males whose fur wouldn't get thick like a wolf. We didn't want to ruin the carpets for God's sake. Abby insisted we take the runt. "He is so calm and not biting my shoelaces like the other ones. He's small and cute like me," she said and smiled. "No way I'm taking the runt!" I declared. I wanted a healthy dog. Maybe even a show dog. A dog we could rally behind, the centerpiece of holiday cards. Abby flipped me a look. "How about this one," Jolie asked. "He's cute and sort of calm." She laughed when he jumped right out of her arms and looked at us. "I guess. It's so hard to choose." Jeff held one of the puppies for a while. The puppy seemed calm. Jeff turned the puppy on his back to cradle him--using the personality test he had mocked. "Trace, he's really sweet and he's been hanging out in my arms the longest. We're never going to know what any of these pups will be like in a few months. We'll train him and he'll be great. Take him." I grabbed onto the six-pound bundle of fur. He was sweet and looked directly into my eyes. I turned him over, rubbing my hand around his little bald belly, feeling the warmth and softness. It struck me, here's my chance to have a third child--despite his performance on those personality tests. Suddenly, I forgot about the books. My future pulsed with possibility. It was as if I'd finally get to experience what caring for a newborn "baby" would be like without the constant worry of splitting my attention equally like I had always done with the twins. I paused with my hand over his heart and scratched under his chin. He hardly moved, clearly relishing this connection. Cradled on his back, he didn't squirm much, and he nipped only playfully. Clearly, this was a gentle soul wrapped in just the right amount of soft blond fur. He passed all four tests. I glanced at my family. "I can't believe I am going to say this, but I like him. I think he's the one! I think we found our Buddy guys!" ** At ten weeks old, Buddy would be ready to leave his mother and siblings and start a new life with us. We gave the breeder a deposit and returned Memorial Day Weekend to pick up Buddy. While I filled out the last of the paperwork, the breeder told us that Buddy had a parasite. I paused and looked up at him. "A parasite?" The breeder shrugged and nodded. "Yeah, giardia. It's very common among puppies. Nothing that this won't cure," he said and handed me a Ziploc bag with tubes of liquid antibiotics, instructing us to inject them into his mouth every day for a week. His relaxed manner eliminated the need to inquire further. I figured parasites, especially in puppies, were no big deal, like my girls having the stomach flu. "Easy, right?" he asked. I nodded, recalling the times I gave Jolie acid reflux medicine when she was an infant, and within a few days her stomach got better. I could handle this. We took more pictures and headed home while my daughters bickered over who got to have Buddy on her lap. I refused to let anything ruin our beautiful day and sat in the back seat between them while Buddy laid on my lap, completing the perfect picture. **

I finished the book. I was so intrigued with the details of your journey I couldn’t put it down. I have known the story line but am beyond impressed at the person you have become. The medical terms, the vitamins, the holistic methods, the meditational awareness, the food sensitivity, the positivity, and the strength you have shown in this book is beyond admirable. There is so much that I can relate but yet there is so much that I can’t. Your journey is not publicized or marketed like breast cancer and chemo. My wish for you is that this book becomes national and parasites become as well known as cancer. There needs to be an awareness about this. I always had an extremely high admiration for you, but this book has raised the bar. You are one smart cookie, one devoted mother, and one strong person. Like I said, this is only the beginning for you….THE BEST IS YET TO COME!!

I took this book with me on vacation on my Nook . . . and I could not put it down. It is not a story of perfection; it is an inspiring story of one courageous women's struggle, journey of medical and self-discovery and ultimate success in her battle and ultimate victory over her exasperatingly impossible-to-diagnose condition and her own pre-conceived (ill-conceived?) self-image, made possible by her own courage, her husband and amazing daughters, and yes, Buddy, the dog that started it all.
